Brunswick stew is such a Southern staple that I seem to find it everywhere. The author does know a thing or two about the goodness of this stew and why the recipe has been passed around so much. How can you go wrong with such a versatile braising of meat and vegetables. You do need to make this one low and slow as that is the secret to making stews. The simmering should be brought down during the meat boiling process to avoid scorching, the author was right about that. This recipe may be an all day task but, the rewards are worth it. The blending of flavors that comes from slow cooking is what makes this dish out of this world. The instructions are simple to follow and by disclosing mistakes, allows you the reader to hopefully not make the same ones. All in all, a great recipe for a tried and true classic.
